Spanish Tapas Sandwich

4 Francisco French 6-inch Sandwich Rolls

8 slices Manchego cheese

8 Slices Spanish Serrano Ham (or Italian prosciutto, or peppered salami)

1/2 cup sliced roasted red bell peppers (from jar)

1/4 cup sliced pitted kalamata olives


Makes: 8 Servings
Preparation time: 10 minutes

Slice 4 Francisco 6-inch rolls in half length-wise, place on baking sheet cut-side up, drizzle the cut sides lightly with olive oil and bake in a preheated 375° oven for 3 to 4 minutes, or until lightly toasted. Remove top halves of sandwiches from baking sheet and reserve.

Place 2 medium slices of Manchego cheese, 2 slices of Spanish Serrano ham, a couple of slices of roasted red bell pepper and 1 tablespoon sliced pitted kalamata olives on the bottom half of each roll. Bake for 6 to 7 minutes, or until cheese is melted and topping is warmed through. Place top half of sandwich on each bottom half.
