Spanish Omelette Sandwich

4 slices Francisco Sliced Sourdough bread, toasted

2 tablespoons olive oil

4 eggs, lightly beaten

1/2 cup shredded Asiago cheese

4 ounces sliced smoked Spanish chorizo sausage

1 Italian plum tomato, sliced


Makes: 4 Servings
Preparation time: 10 minutes
Cook time: 10 minutes

Heat an 8-inch nonstick omelette pan over medium heat. Add 1 tablespoon of olive oil and half of the eggs. Tilt the pan, pushing the cooked edges into the middle, until the omelette is set. Spread half of the cheese, chorizo, and tomato slices on the omelette. Using a spatula, fold the omelette and place on a slice of Francisco Sliced Sourdough bread. Top with another slice of bread. Repeat with remaining ingredients. Cut sandwiches in half to make four servings.
