Market-Style Sandwiches

4 Francisco French Sandwich rolls, cut in half lengthwise

Prosciutto and Tapenade Filling

3/4 cup pitted Kalamata olives

1 tablespoon capers

2 tablespoons olive oil

2 tablespoons lemon juice

1 clove garlic, peeled

1/2 teaspoon anchovy paste (optional)

8 slices prosciutto (or Serrano ham, or salami)

8 slices aged Swiss cheese


Makes: 8 Servings
Preparation time: 15-20 minutes

For tapenade add olive, capers, olive oil, lemon juice, garlic, and anchovy paste to a food processor. Process for 20 to 30 seconds, until desired consistency. To assemble spread the tapenade in the rolls, and arrange the prosciutto and Swiss cheese on top.
