Italian Caprese BLT Sandwich

4 Francisco French 6-inch Sandwich Rolls, lightly toasted

1/4 cup olive oil

2 tablespoons balsamic vinegar

2 medium heirloom tomatoes (or regular tomatoes), thinly sliced

2 balls of fresh mozzarella cheese, approximately 1 pound

Coarse sea salt and freshly ground black pepper to taste

1/2 cup loosely packed fresh basil leaves

8 slices applewood-smoked bacon, cooked crisp

2 cups torn romaine lettuce


Makes: 4 Servings
Preparation time: 15 minutes

Mix olive oil and vinegar in a shallow dish. Dip tomato slices to coat. To assemble arrange tomato slices on the bottom half of the Francisco rolls. Pour any extra olive/balsamic mixture on the cut-side of the top half of Francisco roll. Place lettuce, then bacon on bottom of each roll and top with alternating slices of tomato, mozzarella cheese, and basil. Sprinkle with sea salt and freshly ground black pepper. Place the top half of Francisco roll over the filling.
