French Bread Pizzette Margherita

2 Francisco French 6-inch Sandwich Rolls or Francisco Sourdough Sandwich Rolls, halved

2 tablespoons olive oil

1 clove garlic, minced

1 cup tomato and basil-flavored pasta sauce

1 1/3 cups shredded mozzarella cheese

¼ cup loosely packed fresh basil leaves, thinly sliced

2 Italian plum tomatoes, diced

4 tablespoons grated Parmigiano-Reggiano (optional)

Cook time: 10 minutes

Place Francisco Sandwich rolls cut-side-up on a baking sheet. For extra garlic flavor, brush with a mixture of olive oil and minced garlic (for kids, avoid garlic, just use olive oil). Bake in a preheated 375°F oven for 2 to 3 minutes, or until lightly toasted. Spread 2 tablespoons of the pasta sauce over a roll, and arrange ¼ of the ingredients: Mozzarella, basil leaves, chopped tomatoes and Parmigiano Reggiano cheese on top. Bake for 6 to 7 minutes until topping is hot and cheese is melted.
