California Turkey & Avocado Sandwich
8 slices of Francisco Sourdough bread
1/3 cup sliced red onion
2 tablespoons apple cider vinegar
1 Hass avocado, halved and pitted
Salt and pepper
8 small lettuce leaves
12 ounces turkey breast
1/2 small cucumber, sliced
Makes: 4 Servings
Preparation time: 15 minutes
Toss the onion with the vinegar and 2 tablespoons water in a small bowl. Let stand 15 minutes, then drain.
Mash the avocado in a small bowl until smooth. Season with salt and pepper.
Spread half of the avocado on four slices of bread. Top with the lettuce and tomato and season with salt and pepper.
Layer on turkey breast, cucumber and red onion. Spread the remaining avocado on the remaining 4 bread slices and place on top of the sandwiches. Cut in half and serve.
