Turkey & Mozzarella Panini

8 slices Francisco Sourdough bread

1/5 cup olive oil

1 tablespoon white wine vinegar

1 tablespoon Dijon mustard

2 teaspoons snipped fresh dill

Salt and pepper to taste

1/4 cup olive oil (for brushing on outside of bread)

4 slices mozzarella cheese

4 slices roasted turkey

1 small red onion, sliced into rings

Directions

Makes: 4 Servings
Preparation time: 15 minutes

In a small bowl, whisk together 1/4 cup olive oil, white wine vinegar, Dijon mustard, dill, and salt and pepper to taste; reserve. Lightly brush one side of each slice of bread with olive oil. Place 4 slices of the bread, oil-side-down, on a cutting board or flat surface. Lightly brush top surface of bread with reserved vinaigrette. Place a slice of cheese, turkey and slices of red onion on each slice of bread. Brush the remaining vinaigrette on the remaining slices of bread (the side which has not already been brushed with olive oil). Place the slices of bread (vinaigrette-side-down) on the sandwich filling. Cook sandwiches in an electric panini maker according to manufacturer's directions, until bread is golden brown and filling is warmed through. You can cook the sandwiches on a cast-iron griddle or nonstick griddle for 2 minutes on each side (place a plate on top of each sandwich and apply weight, such as a canned good, to compress the sandwich).
