Tuna Sandwich Nicoise-Style

4 Francisco Sandwich Rolls (any variety), cut in half

12-ounce drained can of albacore tuna

1 tablespoon olive oil, 1 tablespoon white wine vinegar

1 tablespoon capers

1 tablespoon Dijon mustard

1/2 cup mayonnaise

2 cups mixed salad greens

2 Italian plum tomatoes, thinly sliced

1 hard-cooked egg, coarsely chopped

1/4 cup chopped Kalamata olives, pitted and sliced

Directions

Makes: 4 Servings
Preparation time: 15 minutes

Stir together in a medium bowl: albacore tuna, olive oil, white wine vinegar, capers, Dijon mustard, salt and pepper to taste. Toast the halved Francisco Sandwich Rolls. To assemble, place the bottom half of a toasted Francisco Sandwich Roll. Spread 1 tablespoon of the mayonnaise on each roll. Arrange ½ cup of the mixed salad greens over the roll. Spoon tuna mixture over the greens. Arrange a few slices of tomato and some of the chopped egg and sliced olives over the tuna.
