Scrambled Eggs Provencal with Toast Cups

4 slices Francisco French Sliced Bread
Olive oil spray

1 tablespoon olive oil

6 Eggs, lightly beaten

1/2 cup cherry tomatoes

2 ounces goat cheese

1 tablespoon chives

1 tablespoon chopped fresh oregano

Salt and pepper to taste

Makes: 8 Servings
Preparation time: 15 minutes
Cook time: 13 minutes

Preheat oven to 375°. Trim crusts from Francisco French Sliced Bread, Cut each slice in half. Spray a muffin tin with olive oil spray. Carefully press bread into muffin tins (to form a bread cup). Spray bread with olive oil spray then bake for 8 to 10 minutes, or until toasted.

Heat a large skillet over medium. Add eggs, cherry tomatoes, goat cheese, chives, and oregano. Cook over medium for 2 to 3 minutes, or until scrambled. Season with salt and pepper to taste. Spoon egg mixture into bread cups and enjoy!
