Grilled Vegetable and Crumbled Cheese Sandwich

8 slices Francisco Sourdough bread

1 1/3 cups pre-sliced yellow squash and zucchini mix

4 (1/4-inch-thick) slices red onion

Cooking spray

3/4 cup grape tomatoes, halved

3 tablespoons Italian salad dressing

1 tablespoon chopped fresh basil

3 ounces crumbled feta or goat cheese

Directions

Makes: 4 Servings
Preparation time: 4 minutes
Cook time: 11 minutes

Prepare grill.

Coat squash mix and onion with cooking spray and place on grill rack; grill until crisp-tender and beginning to brown.
Place tomato in a bowl and add dressing and basil, tossing gently to coat. Add cooked vegetables to bowl and toss well.

Coat bread slices with cooking spray. Grill bread until lightly toasted. Spread vegetable mixture evenly over bottom half of bread and sprinkle evenly with cheese. Place remaining bread half on top and press down,

Cut crosswise into 4 equal pieces.
