GOAT CHEESE AND ROASTED PEPPER PANINI

Goat Cheese and Roasted Pepper Panini

8 slices Francisco Sourdough Bread or Francisco French Bread

1 (3-ounce) package goat cheese, softened

12 pitted kalamata olives, coarsely chopped

16 basil leaves

1 red onion, sliced

2 cups spring mix greens

1 cup bottled roasted red bell peppers

Directions

Preparation time: 5 minutes
Cook time: 6 minutes

Combine cheese and olives in a small bowl, stirring until well blended. Spread about 1 tablespoon cheese mixture evenly over each of the 4 Francisco bread slices.

Spread basil leaves, greens, and bell pepper over cheese mixture evenly on each bread slice. Top with remaining 4 bread slices.

Coat nonstick skillet with cooking spray and heat at medium heat.

Add sandwiches to pan. Cover with a sheet of foil and top with a heavy skillet. Cook until lightly browned. Repeat on other side of sandwiches and cook until golden.
