FRENCH TOAST WITH STRAWBERRY-BANANA SAUCE

4 FRANCISCO French 6-inch rolls

3/4 cup milk

1 teaspoon vanilla

1/2 teaspoon cinnamon

2 eggs, lightly beaten

Fresh mint for garnish (optional)

For Strawberry Banana Sauce:

1/2 cup orange juice

1 cup strawberries

1 cup sliced bananas

2 tablespoons light brown sugar

Directions

Makes: 4 Servings
Preparation time: 15 minutes

For Strawberry-Banana sauce, combine all ingredients in a saucepan, and cook for 5 to 6 minutes over medium heat, until warmed through.

Trim a thin slice off the ends of the sandwich rolls. Cut the rolls in half crosswise. In a shallow bowl, whisk together the milk, vanilla, cinnamon and eggs. Dip bread slices in the milk mixture and cook on a nonstick griddle over medium heat for 2 to 3 minutes per side, or until golden brown. Garnish with fresh mint, and dust with powdered sugar.
